The goal
An anti-inflammatory style pantry makes the healthy choice the easy choice. It is inspired by patterns like Mediterranean-style eating: lots of plants, olive oil, legumes, herbs, seafood or other quality proteins, and minimal ultra-processed food.
This is culinary strategy, not a diagnosis tool.
The 5 pantry zones
1. Flavor architecture
Garlic, onions, lemons, vinegars, mustard, chili, cumin, paprika, turmeric, black pepper, dried oregano, bay leaves.
2. Quality fats
Extra-virgin olive oil for most cooking and finishing; nuts, seeds, tahini, avocado when available.
3. Protein anchors
Eggs, canned fish (sardines/salmon), beans, lentils, Greek yogurt, tofu/tempeh, frozen fish or chicken.
4. Fiber-rich carbs
Oats, potatoes, quinoa, brown rice, whole-grain wraps or bread you enjoy, corn tortillas.
5. Produce insurance
Onions, carrots, cabbage, leafy greens, frozen berries, frozen mixed vegetables, canned tomatoes.
